I am a devoted avocado lover. But I admit that I was thrown for a loop when pie sister Beth Howard asked me to make an avocado pie for her.
Avocado pie? Like a sweet avocado pie?
Yup.
Here’s how it happened. Beth, who runs the Pitchfork Pie Stand at the American Gothic House in Eldon, Iowa, has a pie cookbook coming out in April. And she asked a few of her fellow pie bakers to test some of the recipes for her.
I saw a chai-spiced pumpkin pie on the list and jumped at it (delicious, by the way). When my eyes landed on the avocado pie, I was oddly fascinated. I couldn’t quite work out the reactions of “yum!” and “eeeww” in my head. And that was enough of a reason to give it a try.
I’ve sworn not to give away the recipe (buy Beth’s book when it comes out April 1!), but I can tell you that it is super-easy and unexpectedly delicious. Every single colleague of mine who tried it in my newsroom raved about it. So I’ll leave you with a few photos, and the idea that perhaps you want to open your mind to avocado in a sweet context.
