Judy Gewertz's lemon bars

Tart/sweet lemon filling in a tender flaky crust.

Cook Time 45 minutes
Servings 16 2-inch squares

Ingredients
  

  • 1/2 cup butter
  • 1/4 cup powdered sugar
  • 1 cup plus 2 Tbsp. flour divided
  • pinch of salt
  • 2 eggs lightly beaten
  • 1 cup sugar
  • Juice and grated rind of one lemon

Instructions
 

  • Preheat oven to 350.
  • Cream together the butter and powdered sugar. Add 1 cup of the flour and the pinch of salt. Mix well.
  • Press this mixture into a greased 8" x 8" pan.
  • Bake 15-20 minutes, until golden brown.
  • While the crust is baking, combine the 2 eggs, 1 cup sugar, 2 Tbsp. flour, and the lemon juice and rind.
  • When the crust has reached golden brown, take it out of the oven and pour the lemon mixture over it. Return it to the oven and bake 20-25 minutes.
  • Let the bars cool completely, then sprinkle with more powdered sugar and cut into 2" squares.
