Method
- Preheat oven to 350.
- Cream together the butter and powdered sugar. Add 1 cup of the flour and the pinch of salt. Mix well.
- Press this mixture into a greased 8" x 8" pan.
- Bake 15-20 minutes, until golden brown.
- While the crust is baking, combine the 2 eggs, 1 cup sugar, 2 Tbsp. flour, and the lemon juice and rind.
- When the crust has reached golden brown, take it out of the oven and pour the lemon mixture over it. Return it to the oven and bake 20-25 minutes.
- Let the bars cool completely, then sprinkle with more powdered sugar and cut into 2" squares.
